The United States Department of Agriculture issued a statement indicating that typical plants produced today are 20% – 80% deficient in minerals. This is because of overuse of chemical fertilizers, pesticides, and unmitigated erosion that all contribute to reduced microbial activity in the soil. This deficit in turn deprives plants of over 60 essential amino acids and minerals. The effect in fruits and vegetables is a bland taste, flavorlessness, and little or no nutritional value.

These enzymes’ stabilization processes help to restrict the activity of potential plant pathogens.
